Why we picked it
At Prévoteau-Paveau there is no conveyor-belt tour. Estelle and Nicolas welcome you straight into their living room. They are very friendly and take the time to answer every question.
Their passion is catching: vines, cellar, blending, dosage, everything comes up. It is a great visit to talk and to understand champagne inside out.
In the glass, the champagnes are excellent and the range is varied: five cuvées, from brut to demi-sec, from blanc de blancs to rosé.
What the visit is like
The tasting takes place in the family living room, with the couple. You taste the cuvées, ask your questions and leave with bottles if you wish.
The estate also shows its cellar, dug by hand into the chalk by Daniel Paveau, Estelle’s father. Riddling is still done by hand here: the bottles stand neck down and get a small turn now and then, so the sediment slides towards the cork.

The estate in short
Champagne Prévoteau-Paveau was born in 2000, when Nicolas Prévoteau married Estelle Paveau. Today the estate farms 4 hectares 25 ares 32 centiares of vines, about 4.25 hectares, a little less than six football pitches.
- 1970sDaniel Paveau, Estelle’s father, then an employee, buys vines bit by bit until he owns 6 hectares.
- 1990sNicolas Prévoteau buys his first plots of vines.
- 2000Estelle and Nicolas marry, and Champagne Prévoteau-Paveau is born the same year.
- 2001When he retires, Daniel Paveau splits his vines between his two children.
- TodayThe vineyard grows as Estelle’s parents wind down: 4.25 hectares.
The vineyard
The vines are spread over 8 villages, from the Marne Valley to the Côte des Blancs: Trélou-sur-Marne, Soilly, Try, Reuil, Venteuil, Mardeuil, Cramant and Avize. Cramant and Avize are two of the 17 grand cru villages.
The estate grows the three main Champagne grapes in similar shares: 30% chardonnay, 30% pinot noir and 40% pinot meunier. This mix lets them blend each cuvée, which means combining several wines to reach a precise taste.
What does négociant-manipulant (NM) mean?
On the label, the code NM means a house that makes its own champagne and may buy grapes on top of its own. Here, it is a grower couple who also farm their own vines. Our guide Big house or grower explains the other codes, such as RM or CM.

We found no more recent rating in the major guides as of 29 October 2026.
Not to be confused with Champagne Prévoteau-Perrier and Champagne Yannick Prévoteau, two other estates based in Damery, in the Marne Valley.
